Spanish Seafood

Dish

Ingredients:


1lb of mussels

1 bag of raw frozen shrimp (peeled and deveined)

1/2lbs of scallops

6 cloves of garlic

1/2 cup of fresh parsley

1 medium size onion

1 pack of Chorizo or pancetta

1 lemon

1/2 cup of white wine

1/2 box of a 32oz box of chicken broth

2 tablespoons of olive oil


Prep:


Rinse and scrub clean the mussels in cold water (water has to be very cold)

After place them in a bowl of ice cold water to soak in refrigerator for 30mins.

This will allow for any sand to come out.

Rinse and clean shrimp

Pat dry scallops with paper towels or a cheese cloth

Cook:


In stockpot add olive oil. Allow oil to warm up, this should take under 5 mins. Add sliced chorizo or chopped pancetta, brown about 6-8 mins. Next add 1 chopped onion, when translucent add the 6 cloves of minced garlic. Add scallops and shrimps toss is pan, then add mussels. Now fill your liquids, white wine, chicken broth, and juice of a lemon.

Place lid and cover. Cook/steam on medium-high heat for 10 mins or until all the shells have opened (Why I like a stockpot with a clear lid to see) Once cooked top and garnish with chopped parsley. Serve alone, with warm-toasted grilled bread, or over your favorite pasta.

*any shell that did not open after being cooked. Do not eat and discard.
