Ingredients
1/2 cup of coconut flour
1/2 cup of almond flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1 cup of any All-bran cereal
2 ripe bananas, mashed
*You could also just use one if you don’t want too much of a banana flavor
2 eggs
1 teaspoon vanilla
1/4 cup of margarine softened
1 teaspoon of cinnamon
1/2 cup of sugar
*you can use a sugar substitute as well
1/2 cup chopped walnuts
1/3 cup of almond milk
*you can use regular milk as well.
Directions
1. Pre-heat your oven at 350℉
2. In a small bowl add the
All-Bran cereal and 1/3 cup of almond milk. You want the cereal to soak in the milk to soften. Set aside
3. In another bowl mix the 2 flours together, the almond and the coconut.
Add baking powder, baking soda and salt, set aside.
4. In another bowl, mix together All-bran, bananas, eggs, and vanilla.
5. *This step you will need a mixer or a hand held electric mixer.
In large mixer bowl, mix together together margarine, sugar and cinnamon on medium speed. Add flour and cereal mixture just a little at a time. Till all combined. Lastly stir in walnuts.
Evenly spread mixture in a lightly greased loaf pan
Bake at 350℉ for 45 mins
